Sun-dried Tomato & Pepper Pizza

The concentrated flavor of the sun-dried tomatoes, combined with garlic and basil, makes for an appetizing and flavorful rustic pizza.

INGREDIENTS

1 ball (16 ounces) organic pizza dough

7.5 ounces organic heirloom tomato sauce

4 ounces Mozzarella cheese, grated

1/2 cup sun-dried tomatoes

1 small red onion

3 cubanelle peppers

2 cloves garlic

1/2 cup fresh basil

1/2 teaspoon sea salt

1/8 teaspoon cracked black pepper

 

INSTRUCTIONS

Preheat oven to 450° F.

Julienne (cut into thin strips) the sun-dried tomatoes, red onion and cubanelle peppers. Mince the garlic and julienne the basil. Set aside.

Place the dough on a sheet pan dusted with cornmeal. If using a pizza stone, follow manufacturer's instructions.

Gently stretch the dough, with lightly floured hands, into a 14-16” circle. Spread the sauce to ½” from the edges.

Sprinkle the cheese evenly across the dough. Spread the sun-dried tomatoes, red onion, cubanelle peppers, garlic and basil evenly over the cheese. Sprinkle with salt and pepper.

Bake until the crust is crispy & cheese melts, about 12-14 minutes depending on your oven.
