Sausage and Kale over Pasta

 
 

I discovered this recipe on Epicurious and I eagerly await kale in the box each week as I love this dish so much! The kale tastes almost butter among the other flavors.

Spicy Italian sausage—1 for each person eating—casings removed
Bunch of kale—rinsed, leaves chopped and center steams removed
Fettuccine
1 cup of chicken broth
Olive oil
Parmesan for garnish


 
 
 

Remove the casings from the sausage and coarsely chop—brown in a frying pan over a medium heat. Meanwhile, boil a large pot of salted water. Once boiling, add kale and blanch for 5 minutes. Remove kale from water with a slotted spoon and add to frying pan with browned sausage. Continue to sauté till just soft—5 more minutes. Add chicken broth. Cook pasta in the water used to cook the kale. Once done add the drained pasta to the pan with kale and sausage. Grate a ¼ cup of cheese and stir in and serve.
