Apple Fritters
| 1 | egg, beaten | 2/3 | cup milk |
| 1 | tablespoon unsalted butter, melted | 1-1/2 | cups all-purpose flour |
| 2 | teaspoons baking powder | 1/8 | teaspoon salt |
| 3 | tart cooking apples, peeled, cored, and cut into 1/3-inch round slices | 1 | tablespoon granulated sugar |
| Approximately 2 cups olive oil | | |

In a bowl, whisk the egg, milk and melted butter. Stir in the dry ingredients; blend. Set aside. Prepare the apples and toss with juice from 1 lemon. Heat the oil in a deep skillet over high heat until hot, but not smoking. Lightly dip the apple slices in the batter. Drop into the oil and fry until golden on both sides, about 5 minutes. Remove with a slotted spoon, drain on paper towels and place in a warm oven., To serve transfer all the fritters to a serving platter and sprinkle with a little extra lemon juice and sugar. Serves 4.
