Stir Fry Bok Choy
| 1 | lb bok choy, washed and cut into quarters |
| 1/8 | teaspoon dried red pepper flakes |
| 1/4 | teaspoon salt |
| 1 | tablespoon vegetable oil |
| 1/2 | tablespoon chopped ginger |
| 1/4 | cup low fat chicken broth |
| 1/8 | teaspoon pepper |

Clean the bok choy, cut into 4 equal pieces. In a large skillet heat oil over medium heat. Add the bok choy; stir fry the pieces until they begin to brown at the edges. Add ginger and red pepper flakes; quickly stir fry but avoid burning the ginger. Add the borth, lower the heat and cover slightly for 3 minutes while the bok choy steams for a moment and is tenderized by the broth. When the broth has cooked off, about 3 minutes, serve the bok choy steaming. Serves 2.
