Sweet and Sour Cabbage
| 3 | Tbls. unsalted butter | 1 | Yellow onion, chopped |
| 1 or 2 | small Fuji apple(s), cored and chopped | 3 | Tbls. red wine vinegar |
| 1/4 | c. chicken stock | 3 to 4 | c. chopped cabbage |
| salt and freshly ground pepper | 2 | Tbls. red current jelly |

Melt the butter in a large saucepan over med. heat. Add the onion and cook, stirring for 2 min. Add the apple and vinegar and season to taste with salt and pepper. Add the cabbage and stir to mix well. Cover and cook over med. heat for 10 mins. In a small bowl, mix together the chicken stock and jelly. Stir into the cabbage. Re-cover and cook until tender, about 10 min. Taste and add more salt, pepper, jelly and/or vinegar as needed for a good sweet-sour balance.
