Garlic-Marinated Carrots

2tablespoons white wine vinegar
1/4teaspoon salt
5cups coarsely shredded carrot
4cloves garlic, thinly sliced or crushed
1tablespoon olive oil
1/4teaspoon pepper
1bay leaf


Combine vinegar, oil, salt, and pepper in a large bowl; stir well. Add carrot, garlic, and bay leaf; toss well to coat. Cover and chill at least 8 hours. Discard bay leaf before serving. Yield: 5 servings.
