INSTRUCTIONS
Drop the tomatoes into boiling water and boil until soft to the touch. Transfer immediately to a food processor and mix with the chile**, garlic and salt to taste (1-2 teaspoons). Process mixture until finely chopped, but not pureed.
When tomato mixture cools, pour into a bowl and mix in onion and cilantro. Chill before serving. **More chiles mean more heat! You can add up to one chile per tomato for an authentic spiciness.
