Creamed Kale
| 1 | bunch kale | 1/4 | C. sour cream |
| 1/2 | C. milk | | salt & pepper to taste |
| 1/4 | tsp. freshly ground nutmeg | | |

Blanch kale in boiling water until tender (about 2 min.).
Rinse in ice water and cut into 1/2" ribbons.
In large
saucepan over med heat, combine the kale, 1/2 C milk, and
nutmeg. Simmer 2 minutes. Reduce heat to low and cook for 5
minutes or until the milk has reduced and thickened. Stir in
sour cream and season with salt and pepper to taste.
