Creamed Kale

1bunch kale1/4C. sour cream
1/2C. milksalt & pepper to taste
1/4tsp. freshly ground nutmeg


Blanch kale in boiling water until tender (about 2 min.). Rinse in ice water and cut into 1/2" ribbons.

In large saucepan over med heat, combine the kale, 1/2 C milk, and nutmeg. Simmer 2 minutes. Reduce heat to low and cook for 5 minutes or until the milk has reduced and thickened. Stir in sour cream and season with salt and pepper to taste.
