Linguine with Mixed Greens and Sun-Dried Tomatoes

2tablespoons olive oil1cup thinly sliced onion
3cups chopped mixed greens1/2cup vegetable broth
1/3cup chopped sun-dried tomatoes2garlic cloves, minced
1/2teaspoon ground red pepper4cups hot cooked linguine
1/4cup grated Asiago cheese


Heat oil in non-stick skillet over medium-high heat. Add onion; saute 4 minutes. Add mixed greens, broth, sun-dried tomatoes, pepper, & garlic; cook 3 minutes. Add linguine; cook 2 minutes or until thoroughly heated. Sprinkle with cheese; toss well. Serves 4.
