Linguine with Mixed Greens and Sun-Dried Tomatoes
| 2 | tablespoons olive oil | 1 | cup thinly sliced onion |
| 3 | cups chopped mixed greens | 1/2 | cup vegetable broth |
| 1/3 | cup chopped sun-dried tomatoes | 2 | garlic cloves, minced |
| 1/2 | teaspoon ground red pepper | 4 | cups hot cooked linguine |
| 1/4 | cup grated Asiago cheese | | |

Heat oil in non-stick skillet over medium-high heat. Add onion; saute 4 minutes. Add mixed greens, broth, sun-dried tomatoes, pepper, & garlic; cook 3 minutes. Add linguine; cook 2 minutes or until thoroughly heated. Sprinkle with cheese; toss well. Serves 4.
