Apple Cinnamon Pecan Cake
| 2 | cups all-purpose flour | 2 | teaspoons baking powder |
| 1 | teaspoon ground cinnamon | 1/2 | teaspoon ground nutmeg |
| 1/2 | cup butter, softened | 1 | cup granulated sugar |
| 2 | eggs | 1 | teaspoon vanilla extract |
| 2/3 | cup evaporated lowfat milk | 3/4 | cup chopped pecans |
| 3 | cups peeled, finely chopped apples | 2 | tablespoons powdered sugar |

Combine flour, baking powder, cinnamon & nutmeg in bowl. Beat butter & sugar until creamy; beat in eggs & vanilla. Alternately beat in flour mixture & evaporated milk. Stir in apples & nuts. Spread batter into baking pan. Bake 40 minutes in preheated 350 degree oven. Cool in pan on wire rack for 20 minutes. Sprinkle with powdered sugar. Cool completely before serving.
