Crustless Spinach Quiche
| 1 | cup chopped onion | 1 | cup sliced fresh mushrooms |
| 1 | tablespoon vegetable oil | 1 | bunch spinach, washed, drained |
| 2/3 | cup finely chopped cooked ham (optional) | 5 | eggs |
| 3 | cups shredded Monterey Jack cheese | 1/8 | teaspoon pepper |

In skillet, saute onions & mushrooms in oil until tender. Add spinach & ham. Cook & stir until the excess moisture is evaporated. Cool slightly. Beat eggs; add cheese & mix well. Stir in spinach mixture & pepper; blend well. Spread evenly into a greased 9-inch pie pan. Bake at 350 degrees for 40-45 minutes or until a knife inserted in the center comes out clean. Serves 6-8.
