Crustless Spinach Quiche

1cup chopped onion1cup sliced fresh mushrooms
1tablespoon vegetable oil1bunch spinach, washed, drained
2/3cup finely chopped cooked ham (optional)5eggs
3cups shredded Monterey Jack cheese1/8teaspoon pepper


In skillet, saute onions & mushrooms in oil until tender. Add spinach & ham. Cook & stir until the excess moisture is evaporated. Cool slightly. Beat eggs; add cheese & mix well. Stir in spinach mixture & pepper; blend well. Spread evenly into a greased 9-inch pie pan. Bake at 350 degrees for 40-45 minutes or until a knife inserted in the center comes out clean. Serves 6-8.
