Rolled Greens

1-1/2pounds kale1teaspoon olive oil
1bacon slice, finely diced4cups chopped onion
1/4teaspoon EACH salt & pepper1/4teaspoon hot pepper sauce


Remove stems. Wash & pat dry. Stack 4 leaves together & roll up holding tightly. Slice thinly to equal 16 cups. Heat oil in Dutch oven until hot. Add bacon; saute 2 mins. Add onion; saute 2 mins. Add kale in batches; cook 1 min after each addition, stir often. Cook another 25 mins or until tender, stir often. Add salt, pepper & sauce; cook 2 mins. Serves 8,
