Rutabaga with Apples
| 1-1/2 | rutabagas, peeled and thinly sliced |
| 2 | apples, peeled, cored and thinly sliced |
| 1/2 | cup fresh orange juice |
| 2 | tablespoons unsalted butter |
| Salt and freshly ground white pepper |

Place the rutabaga slices in a large frying pan, overlapping them as little as possible. Add water just to cover and bring to a boil over high heat. Cover, reduce the heat to low and simmer until tender, 10-15 minutes. Drain in a colander and set aside. Place the apples in the same frying pan, overlapping them as little as possible. Add the orange juice, cover and simmer over medium heat until soft, 5-6 minutes. Put the apples and their cooking liquid in a food processor fitted with the metal blade. Add the rutabaga slices and puree. Return the puree to the frying pan and heat to serving temperature, stirring well. Add butter and salt and white pepper to taste. Serve immediately. Yields 4 to 5 servings.
