Winter Salad With Fruit
| 2 | tablespoons chopped walnuts | 3 | Fuyu persimmons |
| 4 | Satsuma mandarins | 2 | Fuji apples |
| 3 | tablespoons lime juice | 3 | tablespoons rice vinegar |
| 2 | tablespoons honey | | Mix of baby lettuces, rinsed, drained |

Toast walnuts in skillet over medium heat; stir frequently about 2 minutes. Trim leaves off tops of persimmons, peel mandarins, and core apples; slice thinly. Mix together lime juice, rice vinegar, and honey in a bowl. Arrange lettuce on serving plates then place fruit slices on top. Drizzle with lime juice mixture and serve. Serves 4 to 6.
