Buckwheat is a wonderful alternative to wheat and grains, due to its delicious earthy flavor, rich nutrition, and delicate texture. Not a true grain, buckwheat is the seed of a plant related to rhubarb and sorrel, often grown as a cover crop to regenerate soil here in the US. This buckwheat flour is naturally gluten-free (though ours is milled on equipment used to mill grains containing gluten so is not appropriate for those avoiding gluten entirely).
