Preheat the oven to 400 degrees F.
Slice the delicata in ½ inch rings. Scrape out all of the seeds and string with a spoon.
In a bowl, toss the slices in olive oil, maple syrup and salt. Make sure to toss well so that each slice is coated. Arrange slices on a large baking sheet.
Bake in the oven until tender and starting to brown, about 15-20 minutes, flipping once halfway through.
Allow to cool slightly, then remove from the baking sheet. Sprinkle with fresh thyme and enjoy.
