Strawberry Lemon Basil Margaritas

These margaritas are so refreshing for the summer and the natural pink color from the strawberries is so festive!

1 pound strawberries, hulled and sliced lengthwise

2 lemons, zested and juiced

¾ cup sugar, plus 2 tablespoons for the strawberries

1 cup water

8 basil leaves, julienned

2 ½ cups tequila (gold or silver)



Remove the stems from the strawberries and slice lengthwise. Toss them in a large bowl and squeeze ½ lemon over the top. Stir in 2 tablespoons sugar. Let them sit for about 5 minutes to let their natural juices release.  

Meanwhile, in a medium pot, heat the water, sugar and 2 tablespoons lemon zest until the sugar is dissolved. Once the sugar has dissolved, remove from heat and let sit for about 5 minutes. Strain out the zest and add the simple syrup to the remaining lemon juice (approximately ¾ cup). 

While the simple syrup is still warm, add in half of the strawberries and all of the strawberry juice. Let sit until cooled, about 30 minutes.  

Once the simple syrup mixture has cooled, add in the basil and tequila. Pour in the rest of strawberries and any remaining juice and chill completely, at least 30 minutes.

When ready to serve, stir and pour into glasses filled with ice.

Garnish with a fresh strawberry, lemon zest and a sprig of basil.
