Olympia Provisions sources most of their raw pork from the Carlton Farms, OR. Their focus is to provide high-quality meat that is antibiotic-free, sustain-ably and humanely raised.
About the producer
Elias Cairo grew up learning how to make charcuterie at home with his father. He later apprenticed in kitchens around Europe where he rediscovered the art of curing meat. After returning to Portland, he established Olympia Provisions in 2009 and it became Oregon’s first USDA-approved salumeria. Everything is handcrafted naturally with utmost attention to quality.
