About the producer
Norman Huniu started Fermensch out of Orange County, Calif., with a goal to get people who don't think they like kombucha to give it a second look. The brewery's measure of success is the reluctant taster who takes a sip and says, "that's not bad at all."
Fermensch is a family operation with Norman brewing alongside his kids Chad and Mykel. The kombucha is small-batch, culinary-inspired, and built around organic ingredients sourced from Southern California and the broader West Coast. Fermensch approaches flavor the way a kitchen does — with attention to balance and seasonality.
