We promise this recipe isn't diet food, even though it might sound like it. But this dish is actually surprisingly delicious! This would also work great as a lunch, because it's filling and quick to make.

INGREDIENTS

1/2 cup cottage cheese

1/2 avocado, diced

1/4 cup jarred, quartered heirloom tomatoes (available when you customize your box) or 1 heirloom

1/4 cup cucumber, peeled and chopped

salt & pepper to taste

 

INSTRUCTIONS

Scoop cottage cheese into a bowl. Top with avocado, tomatoes and cucumber. Season with salt and pepper and dig in!
