Better-Than-A-Restaurant Salad

This salad is so good, you'll think you ordered it from a restaurant!

INGREDIENTS

1 head romaine lettuce, leaves washed

3 raw beets, peeled

3 raw carrots, washed

1 cucumber, peeled

1/4 sweet onion

1/2 bunch cilantro, chopped

2 tablespoons olive oil

1 lemon or lime, juiced

2-4 ounces goat cheese (optional)

1/4 cup walnuts

2 avocados, sliced

salt & pepper to taste

 

INSTRUCTIONS

Chop the lettuce leaves and place in a large mixing bowl. Grate the carrots and beets using a large grater (you can do this with your food processor if you have the grater attachment) and add to the bowl.

Thinly slice the cucumber and onion and add them to the bowl. Add the cilantro and toss well. Pour the olive oil and lemon or lime juice over the top and toss again. Season generously with salt and pepper.

Portion the salad out into bowls and garnish with avocado slices, walnuts and goat cheese.
