Breakfast "Noodles" with Sweet Potato and Apples

These sweet potato and apple "noodles" put a fun twist on your typical breakfast. Perfect for a cozy fall morning.

INGREDIENTS

2 tablespoons coconut oil

1 large sweet potato, peeled

1 apple, any variety

1/4 teaspoon cinnamon

A sprinkle of salt

 

INSTRUCTIONS

In a large skillet, heat coconut oil over medium heat.

Spiralize the sweet potato and saute for several minutes, until sweet potato softens.

Spiralize apple just before adding to the sweet potatoes as it will brown if cut in advance. Add the spiralized apple to the skillet and stir to mix. Cover and cook for 1-2 minutes.

Sprinkle cinnamon and salt over “noodles” and serve warm. Pairs well with fried eggs.
