Disappearing Baby Bok Choy Salad

This simple salad comes together in minutes and is so delicious! Serve as a side or over rice to make it a larger meal. We also think this would be a great filling for potstickers.

SERVING SIZE

4 as a side

INGREDIENTS

1 tablespoon olive oil

1/3 cup white wine vinegar

1 tablespoon honey

4 tablespoons soy sauce

2 bunches baby bok choy, cleaned and sliced

1 bunch green onions, chopped

1/8 cup almonds, chopped

1/8 cup cashews, chopped

 

INSTRUCTIONS

Whisk together olive oil, white wine vinegar, honey and soy sauce.

Combine the baby bok choy, green onions, almonds and cashews. Toss with the dressing and serve immediately.
