INSTRUCTIONS
In a small saucepan on medium heat add mandarin juice, zest, sugar, vanilla extract, and cinnamon and heat until sugar dissolves, about 5 minutes.
Slowly whisk together juice mixture and Greek yogurt until smooth.
Pour the mixture into Popsicle molds half way full, add a few mandarin segments into each mold and then fill the molds 3/4 of the way to the top (leave room for expansion). Insert Popsicle handle and place in the freezer. Let set and wait for the pops to harden.
Once frozen completely, serve and enjoy!
