INSTRUCTIONS
Combine shallot, pomegranate seeds, oil, lemon zest, lemon juice, vinegar and mint in a small bowl. Season with salt and pepper. Chill then serve.
To make this recipe the day before an event, prepare as directed with the exception of the mint. You can add the mint right before you serve.
