Most cod, also known as Sablefish, comes from Alaska. But this cod was caught off the coast of Washington and processed in Astoria. A very versatile and sustainably harvested fish, Black Cod is great smoked or grilled. Cook until flesh is opaque yet still moist. Avoid overcooking.
Your seafood order is packed frozen and delivered on ice in temperature control packages. You can expect some thawing and should enjoy your seafood within a few days of receipt. Once caught all seafood is processed and flash frozen in vacuum packs at 10 degrees F for freshness. It's the combination of flash freezing which keeps the integrity of the flesh of the seafood at time of freezing AND vacuum packing which halts the seafood's exposure to oxygen. That combination preserves the freshness and flavor of our seafood until you're ready to prepare it for your family.
