Cheddar gruyere cheese sounds like it shouldn't work, that is until you taste it. Bruce Willis, a Master Cheesemaker at in Wisconsin (not the actor), pioneered this unlikely fusion, marrying the familiar tang of cheddar with the creamy, nutty complexity of gruyere into a single wheel. The idea took shape after Willis developed a blend of provolone, cheddar, and Alpine-style cheese that drew enough attention to convince him to start Wood River Creamery. The creamery produces ten varieties of cheddar gruyere, each handcrafted in small batches, and the results have earned Wood River Creamery a national following among serious cheese enthusiasts.
