Greek Yogurt Popsicles with Figs and Vanilla

It's hard to go wrong with popsicles in the summer (or any time, really), but these are especially delicious. Not to mention pretty!

SERVING SIZE

makes 12 popsicles

INGREDIENTS

1/2 cup milk (non-dairy works too)

1/4 cup sugar, honey or agave nectar

1/2 vanilla bean or 1 tablespoon vanilla extract

1/2 cup Greek yogurt

6 mission, candystripe or brown turkey figs, thickly sliced

 

INSTRUCTIONS

Put the milk and sugar or sweetener of your choice into a medium saucepan and heat over low heat, just until the sweetener is incorporated. With a sharp knife, carefully cut along the side of a vanilla bean and scrape the inside with the tip of a knife. Add the vanilla and Greek yogurt into the pan, stirring with a whisk until the mixture is smooth. Pour into a glass container and cool in the fridge for an hour, or until ready to use.

Put the popsicle sticks into your molds and place fig slices on each side of the popsicle sticks to hold the sticks in place. Slowly pour the yogurt mixture over the figs until molds are filled. Repeat with remaining popsicle molds, then place in the freezer. Freeze according to your popsicle mold instructions.
