There's something fun about eating ice cream when it's cold outside, especially when it's fall flavors. This vegan ice cream (with real pumpkin!) is easy to make -- and even easier to eat.

SERVING SIZE

makes approximately 1 pint

INGREDIENTS

2-3 bananas, peeled and frozen

1 cup sugar pie pumpkin puree (see our blog for step-by-step instructions)

1/3 cup maple syrup

dash cinnamon, ginger, allspice, nutmeg and cloves or 1/2 teaspoon pumpkin pie spice

 

INSTRUCTIONS

Break the frozen bananas into chunks and toss them into a blender or food processor. Add the pumpkin puree, maple syrup and spices and process until smooth. Enjoy now or put the ice cream into a resealable freezer container for a few hours or overnight.
