In a medium saute pan, heat the olive oil over medium-low heat. Add the shallots and cook, stirring occasionally, until the shallots are very soft and golden brown, about 10-15 minutes. Remove from heat and allow to cool slightly.
In a bowl, stir together the apple cider vinegar, yogurt and Worcestershire sauce. Add in the shallots and stir to combine. Season to taste with salt. Garnish with parsley and serve with veggies, crackers or potato chips.
