Caramelized Appletini

This caramelized appletini is perfect for fall and tastes like apple pie. But, you know, in drink form. So even better than apple pie -- bet you didn't think that was possible.

INGREDIENTS

6 ounces (4 shots) vodka

3 ounces (2 shots) Gravenstein apple juice

1 teaspoon lemon juice

2 tablespoons apple syrup, divided (see recipe below)

1/2 apple, cored, sliced thin

Raw sugar for caramelizing the apple slices

Apple Syrup:

Gravenstein apple juice (32-oz bottle)

1 tablespoon lemon juice

1/2 cup raw sugar or maple sugar

 

INSTRUCTIONS

To make the apple syrup:

Pour the entire bottle of apple juice into a medium saucepan along with the lemon juice and sugar. Bring to a boil, then lower the heat to medium and continue to simmer for 30 to 40 minutes, until the temperature reaches 220 degrees F.

Let cool a bit before pouring into a jar or squeeze bottle. Keep refrigerated when not in use.

Line 2 martini glasses with a swirl of the apple syrup (1 tablespoon) and refrigerate to let set.

In a shaker with ice, pour in the vodka, apple juice, lemon juice and 1 tablespoon of the apple syrup. Shake. Set aside.

Dust a thin layer of raw sugar onto the apple slices and brulee with a kitchen torch.

Pour the contents of the shaker into the glass and garnish with the caramelized apples. Serve immediately.
