Roasted Carrots with Thyme

We love the flavor of thyme with roasted carrots in this delicious side dish.

INGREDIENTS

1 bunch carrots (approximately one pound), green ends removed

1/2 tablespoon olive oil

1/2 teaspoon fresh thyme

salt & pepper to taste

 

INSTRUCTIONS

Preheat the oven to 400 degrees Fahrenheit.

Scrub the carrots and slice on the diagonal in 1/2-inch pieces. Place them in a roasting pan and drizzle with olive oil. 

Sprinkle the thyme over the top and toss to combine. Season with salt and pepper. Roast until the carrots are tender and starting to brown, approximately 40 minutes. Enjoy!
