Sticky Toffee Pudding

Melted toffee/caramel/browned butter deliciousness drizzled over a cake (don't be fooled by the name) that one coworker described as, "Yes! It's Awesome!" The secret ingredient: dates! That makes it totally healthy, right?

INGREDIENTS

Pudding:

4 tablespoons butter

1 1/2 cups flour

6-7 dates, pit removed and roughly chopped (should yield approximately 1 1/2 cups)

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon sea salt

3/4 cup sugar

1 teaspoon vanilla extract

2 large eggs

Toffee Sauce:

1 1/4 cups (packed) brown sugar

1/2 cup heavy whipping cream

4 tablespoons butter (we used salted because we like that sweet/salty flavor)

1 teaspoon brandy (optional)

1/2 teaspoon vanilla extract

ice cream or whipped cream (optional)

 

INSTRUCTIONS

Preheat the oven to 350 degrees Fahrehnehit. Spray or butter and flour 6 ramekins or a Bundt pan. Put the dates in a saucepan with 1 1/4 cups water and bring to a boil. Remove from heat and stir in baking soda (the mixture will foam, which is normal). Set aside to let the dates cool.

In a small bowl, whisk flour, baking powder and the salt. In a large stand mixer or with an electric mixer, beat the butter, sugar and vanilla until combined (it will be grainy). Add 1 of the eggs and beat until blended. Pour in half of the flour mixture and half of the date mixture and mix to combine. Repeat the process with the egg, flour and dates. Pour the batter into the ramekins or cake pan. If you use ramekins, we placed them on a baking sheet for easy removal. Bake for 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool on a wire rack.

To make the toffee sauce: Bring the sugar, cream and butter to a boil in a small saucepan over medium heat, stirring constantly. Boil for 2 minutes, stirring constantly. Remove from heat and stir in brandy (if using) and vanilla. To serve, carefully remove the cake from the ramekins or cake pan and drizzle with toffee sauce. Serve with ice cream or whipped cream if desire.
