Roasted Bok Choy

This bok choy is roasted with garlic and ginger and gets a lime zest, soy sauce and vinegar drizzle at the end. It's an addicting and delicious side and couldn't be simpler or faster to make!

SERVING SIZE

4 as a side

INGREDIENTS

1 pound baby bok choy (approximately 3 heads)

2 teaspoons olive oil

1 garlic clove, minced

1 teaspoon fresh ginger, minced

1 teaspoon lime zest (approximately 1 lime)

1 teaspoon rice vinegar

1 teaspoon soy sauce (or similar substitute)

 

INSTRUCTIONS

Preheat the oven to 450 degrees Fahrenheit. Trim the bottoms off the baby bok choy and place the separated leaves in a roasting pan. Drizzle with the olive oil and toss to coat. Sprinkle the garlic and ginger over the top. Roast for 5-6 minutes.

Meanwhile, combine the lime zest, rice vinegar and soy sauce. When the bok choy is finished, drizzle the mixture over the top. Serve immediately.
