The inspiration for Capay Mills came from living and working in Italy, where passion for traditional, locally grown foods remains a way of life. Capay Mills’ works with family farmers in Capay Valley and throughout California to plant cereal grains in regenerative farming systems; to introduce bakers and chefs to local grains and freshly-milled flour; and to provide the infrastructure needed to plant, harvest, clean and mill grain grown on diversified family farms. Their stoneground wholegrain and high extraction flour preserves all the flavor and nutrition of wholesome grain grown following organic practices.
