Capay Candystripe figs are light yellow and green-striped, medium sized and have a rather bottom-heavy tear-drop shape. Beneath the green-ribbed skin lies a crimson-colored seeded pulp with a flavor similar to that of strawberry or raspberry jam. The flavor is light and sweet, as fully ripe Candystripe figs have a high sugar content and are considered to be one of the best tasting of all figs. Although they are delicious raw, try cooking them down to make jam or filling for cookies or make a compote to top ice cream or cheesecake. The sweet flavor and unique look of Candystripe figs pairs well with strong cheeses. Store ripe figs on a paper towel-lined plate or shallow container. Do not stack them. Spread them out and arrange in one layer to avoid bruising and allow for air circulation. Cover plate tightly with plastic wrap.
