San Joaquin Gold is an Italian-style cheese with a natural thin rind and a tawny buttery color, similar to Parmesan. Its firmness makes it perfect for grating. Try it over soups, salads or mini pizzas. Like the European tradition of naming unique foods after the location where they were first produced, Fiscalini named this cheese after the valley where it is made. Produced with raw cow’s milk and aged for a minimum of 12 months, this cheese is mildly sweet and mellow when young, and it develops a darker golden hue and deeper, nuttier flavor over time. Not certified organic.
About the producer
The Fiscalini family has been producing milk since 1914. Their farm was started by their great-grandfather and the cheese making plant was started by their father, supporting 30 employee families. Four generations later, they are still family-owned and operated. They are proud to honor their cheese-making traditions which date back to the early 1700s in the Alps of Switzerland. The Fiscalinis are committed to taking care of the land for future generations, giving them a strong focus on sustainability. They are committed to producing great tasting, delicious, extraordinary cheeses while also being leader in food safety.
