This fork-tender cut of beef tenderloin is often considered the king of steaks thanks to its melt-in-your-mouth texture. Marinate it, smoke it, wrap it in bacon, or season it with a rub. We recommend searing it quickly over high heat before transferring it to a lower heat until cooked to your desired doneness. This cut comes from the critically acclaimed Buckhorn Steakhouse and is hand-cut by their in-house butcher and aged 14 days.
