Named for their shape, kidney beans originated in South America and migrated to Louisiana in the late 1700s. In addition to the culinary staple red beans and rice, kidney beans are also delicious in chili, salad, and stews. High in iron, B vitamins and fiber, these beans are traditionally served as a compliment to sausage, ham, and fried chicken and can be exchanged with pinto beans in recipes.
