About the producer
Etto founders and owners, Brian and Stephanie Terrizzi, create Italian-style wine and pasta to share their family traditions with the community of Paso Robles, California and beyond. After visiting relatives and many pasta factories in Italy, Brian felt like the Italian wine and food business was "ingrained in his psyche" and needed to be expressed. Etto represents just the right portion of pasta for one person, whether it's a primi or part of a meal, and is a celebration of flavors when high-quality ingredients come together in perfect harmony. Etto pasta is made using traditional methods,-- bronze dies which create a rougher texture so sauce sticks, and slow-dried to retain aroma, taste and nutrition. The pasta is made from organic American semolina flour and is high in protein and complex carbohydrates and low in sugars.
