Olives harvested early in the season, before they have had a chance to ripen, yield a small percentage of oil, giving it an intense and robust flavor. Bariani uses a process of extraction that is true to the origins and art of olive oil making. The taste of a good quality unfiltered olive oil is hard to beat, and in addition to flavor, it is known to have 3 times the amount of antioxidants as a regular off-the-shelf olive oil. The opalescent appearance of this oil is a precious trait due to minute harmless olive particles that will settle over time. A wonderful olive oil for your salads or for drizzling over grilled vegetables, meats and bruschetta. Produced using organic methods. Not certified organic.
