Orange Kiss Me Cake

This was a Kathleen Barsotti favorite and we love to carry on the tradition of making this delicious cake.

INGREDIENTS

1 orange

1 cup raisins

1/3 cup walnuts

2 cups flour

1 cup sugar

1 teaspoon baking soda

1 teaspoon salt

1/2 cup butter

1 cup skim or low fat milk

2 eggs

Topping:

1/3 cup sugar

1 teaspoon cinnamon

1/4 cup chopped walnuts

 

INSTRUCTIONS

Oil the bottom of a 13 x 9-inch pan.

Zest the orange and add it to the food processor, along with the raisins and walnuts. Grind them together using a coarse setting on your food processor or grinder.

Squeeze the orange and reserve the juice.

Combine flour, sugar, baking soda and salt in a large mixing bowl. Add the butter and milk. Blend well at low speed and then beat for 1 1/2 minutes. Add the eggs and beat another 1 1/2 minutes. Add the orange-raisin mixture and blend well.

Bake at 350 degrees Fahrenheit for 40 to 50 minutes.

When it is removed from the oven, drizzle the reserved orange juice over the warm cake. Combine the ingredients for the topping and sprinkle the topping mixture over the cake.
