Simple, Delicious Roasted Carrots

This is an exceptionally simple, exceptionally delicious way to enjoy carrots as a side dish.




1 bunch Nantes carrots

2 Tbs olive oil

3 cloves garlic

1 sprig fresh rosemary

Salt and pepper to taste.



Preheat oven to 375 degrees. Cut off tops of carrots just below fronds, leaving a little stem at the top. Holding the stem, peel each carrot with a vegetable peeler. Toss peeled carrots with rosemary sprig (whole), garlic cloves (also whole) and olive oil; salt and pepper generously. On a baking sheet, spread a sheet of aluminum foil and lay carrot mixture on it; make a packet with the carrots inside, sealed tightly. Bake for 20 minutes or until carrots are medium tender. Unfold foil and increase oven temperature to 400 degrees. Bake until carrots are spotted brown and fork-tender. Serve, with or without rosemary needles and garlic cloves; reserve garlic cloves, if desired, to flavor salad dressings or mashed potatoes.
