Two Ingredient Vegan Cherry Ice Cream

It's rare to have leftover cherries at the end of the season (what are leftover cherries?), but if you do have some, this ice cream is a delicious way to use them up.

INGREDIENTS

2 cups pitted cherries, frozen

1 banana, peeled

 

INSTRUCTIONS

In a food processor or blender, mix the frozen cherries. If you hear unnaturally loud sounds, stop the blender and make sure you didn't accidentally get a pit in there.

Add the banana and mix until the cherries and banana are combined. You can either eat it now or place it in a freezer container and freeze overnight.** Garnish with fresh cherries (optional).

Enjoy!

**Freezing overnight will result in a slightly icier, sorbet-like texture. If you prefer the slightly meltier texture before freezing, but have already frozen it, put it back in the food processor or blender with another banana and mix until combined.
