Apart from the basil, you won’t need much else to get this soda going. You’ll ideally want to get started the night before you want to serve your drink, but don’t worry if you only have a couple of hours.
Bring water and sugar to a boil over high heat until sugar is dissolved. Remove from heat and add fresh basil, stirring to combine.
Let sit for at least an hour to cool. Preferably, refrigerate overnight.
Once cool, strain the simple syrup into a jar. To make your drink, stir 2 tablespoons syrup into one cup of sparkling water. Add 1-2 ounces gin or vodka if desired.
Your basil simple syrup will keep in your refrigerator for about a week.
