Cauliflower "Tater" Tots

We couldn't believe how delicious these tater tots were -- and they don't taste like cauliflower! We love the addition of jalapeno for an extra little kick. These would make a great appetizer or side dish and will be devoured in minutes.


makes approximately 3 dozen tots


3 cups cauliflower, shredded

1 egg

1/2 of a red bell pepper, seeds removed and chopped

1 small jalapeno pepper, seeds removed and chopped

1/4 cup cilantro, chopped

1 cup shredded pepper jack cheese

1/4 cup Panko bread crumbs

salt and pepper to taste

Preheat the oven to 375 degrees F.

Using a food processor with the grater blade attachment, or a box grater, grate or shred the cauliflower. Place the cauliflower in a colander and squeeze the cauliflower to get out the excess moisture (trust us, don't skip this step).

Put the cauliflower, egg, bell pepper, jalapeno, cilantro, cheese and Panko in a large mixing bowl and stir to combine. Season with salt and pepper. Generously grease a large baking sheet or line with parchment paper or a Silpat. Using your hands, form the tater tots into small balls. Place them on the baking sheet, about 12 at a time, depending on the size of your tater tots and your baking sheet.

Bake for 10 minutes, then use a spatula to flip the tater tots over and bake for 10 minutes more. Serve with ketchup if desired.
