Kohlrabi, Apple and Hazelnut Salad

We love the fresh crunchiness of the apple and kohlrabi in this light and refreshing salad. (Adapted from Bon Appetit).

SERVING SIZE

4-6 as a side

INGREDIENTS

1/2 cup toasted hazelnuts1 bunch kohlrabi, peeled (save the greens for a saute)

1 Cameo or Gala apple, peeled and cored

1/2 teaspoon grated lemon zest

1 tablespoon fresh lemon juice

1 tablespoon Ginger White Balsamic Vinegar or white wine vinegar

1 large handful fresh mint leaves, torn

1 tablespoon olive oil

1/4 cup grated Parmigiano-Reggiano or Parmesan cheese

salt, to taste

 

INSTRUCTIONS

Using a mandoline or very sharp knife, thinly slice the kohlrabi and apple. Add all the ingredients to a bowl and toss to combine. Season with salt to taste.
