Baked Polenta Fries

These polenta fries are DELICIOUS and the whole pan will disappear in seconds. We love dipping them in tomato sauce, but they're good plain too.

SERVING SIZE

makes 1 pan polenta fries fries

INGREDIENTS

2 cups water

1 cup milk

1 1/2 cups polenta

1/4 cup Pecorino Romano cheese, grated

2 tablespoons olive oil

salt and pepper to taste

 

INSTRUCTIONS

Bring the water to a boil in a large saucepan. Add the polenta and stir constantly (you might want to turn down the heat some because the polenta can splash out and it hurts!). Add the milk and cook, stirring constantly, 10 minutes.

Remove from heat and stir in the cheese, oil and salt and pepper. Spread the polenta onto a baking sheet and cover with plastic wrap. Place the baking sheet in the fridge for at least an hour.

Preheat the oven to 400 degrees Fahrenheit. Remove the plastic wrap from the polenta. Grease another baking sheet and cut the polenta into strips. Arrange the fries on the baking sheet so they have some space between them (you may need to do two batches). Bake for 25-30 minutes and let cool. Serve with tomato sauce or another favorite dip if desired.
