Preheat the oven to 475 degrees Fahrenheit.
Slice the bottoms off the Brussels sprout and compost. Peel off a few of the outer leaves and compost those too.
Place the Brussels sprouts on a baking sheet and drizzle with olive oil. Season generously with salt and pepper and place in the oven. Roast for 10-15 minutes, or until beginning to crisp and turn golden brown. Note: stir halfway through cooking to ensure even crispness.
