Quinoa Breakfast Bars with Bee Pollen

Packed with protein and bee pollen (superfood!), these breakfast bars are a healthy and convenient way to start off the day. Best part: they aren't crazy sweet and would go great with your morning coffee.

SERVING SIZE

makes approximately 10 bars

INGREDIENTS

1 cup uncooked quinoa

1 cup oats (quick or old fashioned)

1/2 cup almonds, roughly chopped

1/4 teaspoon salt

1 teaspoon cinnamon

2 large eggs

2 teaspoons bee pollen

1/2 cup dried cranberries (or other dried fruit)

1/4 cup creamy almond butter (we used Full Belly)

2 tablespoons honey

 

INSTRUCTIONS

Preheat the oven to 325 degrees Fahrenheit. In a large mixing bowl, combine the quinoa, oatmeal, almonds, salt and cinnamon and stir to combine. Whisk the eggs until beaten and pour over the quinoa mixture. Stir to coat. Add in the bee pollen and dried cranberries.

In a small saucepan over medium heat, melt the honey and almond butter and stir to combine. Pour that over the quinoa mixture and stir until everything is fully coated. Grease a 9x13 baking dish and pour the breakfast bar mixture into the baking dish. Press the breakfast bars into the pan - pressing them will make them stick together better.

Bake for 25-30 minutes, or until the edges are beginning to brown. Remove from the oven and let cool. Once cooled, slice into 10 breakfast bars. They will keep for a few weeks on the counter or in the fridge.
